Jaclyn's Chicken with Spicy Squash and Broccoli


Healthy eating shouldn't have to be hard work! Here's a favourite recipe from our trainer Jaclyn to prove just that. 

Serves 4
150g-200g protein per person (I boil steak fillets for 5-8 mins in water and then slice to serve, you can use chicken, fish or just a variety of vegetables to suit)
1 large butternut squash
2 tablespoons olive oil
1 teaspoon dried chili flakes
1 teaspoon ground cumin
200g broccoli
100g pumpkin seeds
400g feta cheese
Sea salt and freshly ground black pepper
Extra virgin olive oil, for drizzling


1. Preheat oven to 200 degrees/ gas mark 6
2. Peel and cut the squash into wedges or large chunks, toss in olive oil, chilli flakes, cumin and salt and pepper
3. Transfer to a roasting tin and roast for approx. 35-45 minutes or until slightly golden and cooked through
5. Bring a large pan of water to the boil, place your fillet steaks/chicken in and boil for approx. 5-8 mins - slice steak into strips. Meanwhile blanch your broccoli for approx. 5 minutes, rinse under cold water
6. Mix meat/fish with roasted squash and broccoli. Drizzle olive oil crumble feta on top
